Dining at du Lac Assisted Living is a time for residents to come together to enjoy delicious meals made with garden-fresh ingredients. All meals are made from scratch, and all desserts are prepared on-site by du Lac’s outstanding dining services team.
The menus that Keith creates at du Lac are developed in collaboration with residents. He seeks their ongoing input to ensure that the dishes being served are resident favorites—or something fun and new to try.

<a id="&quot;AssistedLiving"></a>Cooking is Keith’s true passion! He began his career in food services as one of the original dining employees at du Lac Assisted Living when it first opened in 2000, and has been a chef for 22 years, working his way up the ladder. As the Director of Dining Services, a position he has held since 2020, Keith’s focus has been not only on resident-focused dining and preparing delicious meals, but he also strives every day to help his team work to reach their goals.
What is your favorite thing about working here? Being able to interact with our residents, hearing their stories and the memories of their lives.
What is your favorite cuisine to prepare? My favorite to prepare is Japanese cuisine!
Tell us about the menus for holidays and special occasions like birthdays. For holidays, I really try to put out a nice spread with something for everyone to enjoy. Last year’s <a href="https://cms.notredamehealthcare.org/wp-content/uploads/2021/11/du-Lac-Christmas-Menu-1.jpg">Christmas Dinner Menu</a> was a really good example of that! I also try to incorporate foods that our residents may have enjoyed, or maybe even cooked themselves, before they joined our community.
How does the mission of the Sisters of Notre Dame de Namur play into the food and dining at Notre Dame du Lac?  The Sisters and our other residents have so many wonderful ideas when it comes to the menu. I really try and take the time to find a way to incorporate those ideas into the menus. Food is a huge part of not only making sure our residents receive proper nourishment, but I also want them to enjoy what they are eating and look forward to mealtimes with their friends!

Director Dining Services

The dining at Notre Dame Long Term Care is centered around the residents, to ensure that the homemade meals prepared every day are not only healthy, but delectable favorites.
Arlene Vaillancourt, Director of Food &amp; Nutrition Services, and her team spend a considerable amount of time listening to residents when planning the menus, communicating with residents and families through interviews, the resident dining committee, and just being involved personally. Residents and families are encouraged to make requests to Arlene directly.

<a id="LongTermCare"></a>Arlene realized her passion for cooking 25 years ago, when she accepted her first job in a restaurant—but it wasn’t until she accepted a part-time evening cook position soon after in a 187-bed health care center that she realized that she had found a new career where she could truly make a difference in peoples’ lives. Arlene never looked back and has worked full-time in health care food service ever since. She has been the Director of Food &amp; Nutrition Services at Notre Dame Health Care since October 2016, and over the years has also received her Dietary Managers Certification from Becker College, Certified Manager Credentials from Boston College, Culinary degree from Johnson &amp; Whales University. Arlene has also attended classes at Harvard on lifestyle medicine and the role nutrition plays in treating and preventing disease.
What is your favorite thing about working here? The support we receive from the leadership, the residents we serve, and the team we work with day in and day out. A special reminder each day with an opening reflection sets the tone&#8230;to always treat others as we ourselves wish to be treated. This is a special place! It’s not just a job, it’s a mission, and the encouragement received keeps it all in perspective. Through COVID, we have rolled up our sleeves and worked as a team across this campus. With that came many challenges, increased empathy, and more growth. I do truly love what I do and am grateful for my place in this beautiful organization.
What is your favorite cuisine to prepare? I have a passion for farm-to-table. I love to create nutritious meals with fresh local ingredients.
Tell us about the menus for holidays and special occasions like birthdays.  I love talking to the Resident Dining Committee about what would make the holidays special in our facility—not just for one day but for the whole season, and I love to bring it to life with special dishes requested like Indian Pudding, Apple Brown Betty with ice cream, and warm Cobbler. Residents can also request special meals. It’s the little touches that make a difference.
How does the mission of the Sisters of Notre Dame de Namur play into the food and dining at Notre Dame Long Term Care and Rehabilitation Center? The mission is expressed in love, joy, and compassion. Our focus on the care we provide exemplifies that God is good in every way. Serving well-prepared meals preserves a person’s dignity and makes them feel loved and wanted.
